Endive is a two-year crop although it is produced and consumed as a one-year vegetable. It is grown because of the leaves, which form a rosette. Endive leaves can be smooth, weak or very wrinkled, wavy, round, strongly serrated in different colors. Endive cultivation is most prevalent in southern Europe.

Temperature
